Mutton Biryani

Tradition and authenticity is what exemplifies our Mutton Biryani. It is a delicious, aromatic, textured dish that comprises of three different components in a Kadai or pot, layered and cooked on a very low heat, otherwise known as 'dum'. The bottom layer consists of raw lamb meat marinated overnight and cooked in a gravy of fragrant spices and herbs. The middle layer consists of partially steamed basmati rice, scented with saffron and milk. The third and final layer is topped with caramelized onions and coriander leaves as a garnish. The result is truly a delectable experience as the meat is succulent and falling of the bone, which makes it a melt-in-the-mouth extravaganza. The Biryani is served with Raita (a yoghurt preparation) and MirchiKaSalan (a curry spiced with green chillies).
